If you have ever tried matcha and thought "this just isn't for me" because it didn't taste good, you are not alone. In fact, it is one of the most common prejudices we hear from customers. It all starts in Japan

Our ceremonial grade organic matcha comes from Japan, where the cultivation and processing of matcha are not treated as an industrial process, but as a tradition that requires time, precision, and respect for the plant.

One of the most important steps is shade-growing (the shade-grown method). A few weeks before harvest, the plants are covered to reduce sun exposure. This changes the structure of the leaf itself, namely it slows down growth and increases the concentration of amino acids, especially L-theanine.

It is L-theanine that gives matcha what we often describe as an "umami" profile - a natural, mild sweetness and depth of flavor that softens bitterness and creates a feeling of smoothness in every sip.

The difference between high-quality matcha and lower-quality ones

A large part of the matcha products found in stores comes from industrial production where the criteria are completely different: faster cultivation, older leaves, and less precise processing.

Such matcha often has a more pronounced bitterness, a thinner texture, and lacks that balanced, rounded flavor we expect when we first hear about matcha as a "wellbeing drink".

That is why the impression is created that matcha is bitter - even though the difference actually lies in the quality of the raw material, and not in the concept of the drink itself.
