Our favorite cookies, which remind us of childhood and the sweetest holidays, are crispy and gentle linzers. This year, we made them in a slightly different version - with the addition of matcha powder, which, besides being a beverage, can also be used as a healthy ingredient in sweet bites.

Ingredients:

  • 250g oat flour
  • 3g matcha powder
  • 175g butter
  • 80g brown sugar
  • 1 egg
  • ½ small teaspoon of baking powder
  • 1 vanilla sugar
  • Jam of your choice
  • Powdered sugar (for dusting)

Mix all the dry ingredients.

Mix in the butter and finally add the egg.

Leave the dough in the fridge for at least half an hour until it is well chilled, as it is quite soft.

Roll out the dough to a thickness of 3-4 mm and cut out shapes as desired.

Put the cold cookies in a preheated oven and bake at 170°C for 10-12 min (adjust to your oven and preferences).

The warm cookies are very crumbly, so sandwich them with jam only after they have cooled completely.
