If you're a matcha lover like us, you'll want matcha in cookies as well 💚
These matcha cookies are made by Janja Benic @janjolinka. The ingredients include almonds, matcha, and white chocolate. You can also combine coconut, hazelnuts, or carob with almonds. Of course, a cup of matcha latte goes perfectly with these cookies.

Biscuits with almonds

24 pieces


Ingredients:

  • 200g of almond flour
  • 100g of brown sugar
  • 1/2 - 1 teaspoon @materia_life matcha (depending on whether you like the stronger taste of matcha or not)
  • 2 tablespoons amaretto disaronno or rum
  • Zest of 1/2 lemon
  • 135 g of egg whites - about 4 pieces of M eggs
  • The core of 1/2 vanilla bean or ¼ teaspoon vanilla powder


Additionally:

  • 70 g of white chocolate
  • Almond leaves

STEP 1

Preheat the oven to 180°C. Place baking paper on a baking sheet

Put sugar in a bowl, grate lemon on it, and add vanilla. Add almond flour and matcha, then egg white and amaretto disaronno (or rum). The egg white is not mixed, just put directly into the dry ingredients.

The mixture should be a little softer.

Weigh into 20-gram balls and flatten them a little.

Bake for about 9-10 minutes - depending on the power of the oven.


When the biscuits are baked, let them cool and during that time melt the white chocolate in a steamer (be careful not to burn it, when the water starts to boil, remove the chocolate from the steam and just stir until all the chocolate melts). Put the chocolate in a piping bag, then squeeze it over the cookies and add the almond leaves.
