Matcha tiramisu

Matcha tiramisu for two with homemade cherries but can be prepared with any fruit, or without it.

Biscuit:

25g sugar

65ml soy milk

1 teaspoon apple cider vinegar

a few drops of vanilla extract

30ml olive oil

pinch of salt

80g flour

⅓ teaspoon baking soda


Cream:

200g vegan cheese

100l vegan whipped cream

1 tablespoon powdered sugar

a few drops of vanilla extract


Matcha layer:

80ml water

3 teaspoons matcha powder

STEP 1

Mix sugar, soy milk, apple cider vinegar, vanilla extract, oil, and a small pinch of salt. Combine the flour with baking soda and add wet ingredients.

STEP 2

Stir briefly, until you get a solid mixture, then transfer the mixture to a lightly oiled pan. Preheat the oven to 180°C for 15 minutes.

Combine whipped cream with vegan cream cheese, powdered sugar, and vanilla.

Whisk 3 teaspoons of matcha powder in 80 ml of hot (but not boiled) water.

Dip the cooled pieces of biscuit in matcha and arrange in a glass. When you cover the bottom, pour a couple of tablespoons of cream. Repeat the process twice.

Cool well and sprinkle with a little matcha on top. If desired, layer some fruit onto the cream.
