If you have some fresh zucchini, try these lentil pancakes with grilled zucchini. They taste really great, and there is also a yogurt and dill sauce as a final touch

1/2 cup red lentils

1 tsp garlic powder

1/2 cup water

1/2 tap cayenne pepper

salt, pepper (to taste)

1/2 zucchini

soy yogurt (sugar free)

1 tsp dill


STEP 1

Soak the lentils in water overnight.

STEP 2

Strain the lentils and add to blender with garlic powder, water, cayenne pepper, salt and pepper. Blend it into a creamy mixture (similar to pancake mixture).

Make pancakes in oiled non-stick pan on both sides.

Slice the zucchini, add salt and pepper then sauté them in a pan.

STEP 5

Serve pancakes with roasted zucchini and the mixture of yogurt and dill. Top with a few leaves of fresh parsley and/or coriander.
