Dalgona Matcha

Dalgona Matcha is a real treat for all the matcha lovers out there. It has the strength and earthiness of green tea but with the addition of sweeteners - all this is nicely balanced into a creamy and foamy drink. Keep in mind that for this, as well as for any other matcha preparation, you must have high-quality Ceremonial grade matcha.

The texture of Dalgona Matcha can best be described as velvety, creamy, and foamy. Dalgona matcha is rich in volume, thanks to aquafaba (water from cooking chickpeas or the one that comes in a can of chickpeas). Firm foam is made from it, with a little sugar to strengthen the foam but also to balance the taste, and the matcha, which we previously stir in a (very) little warm water. The final result is a cloudy green foam-like drink with a perfect matcha taste.


Ingredients for two servings:

  • 4 tablespoons of chickpea water (aquafaba)
  • 1-2 tablespoons of granulated or powdered sugar (we used powdered agave sugar)
  • 1 teaspoon of Materia matcha powder
  • 2-3 tablespoons of water
  • plant-based milk as desired (we love oat)
  • a couple of ice cubes (optional)


Mix chickpea water in a clean bowl until you get a firm foam. Gradually add sugar and mix until the foam hardens.



Mix the matcha powder with warm water in a bowl with a bamboo whisk.



Add the whipped matcha to the foam and mix until all the ingredients are combined.



In a tall glass, put ice, plant-based milk and matcha foam on top.
